I was inspired to brew a Hazy IPA using WHC Lab's Pineapple Passion yeast after trying it at DYBRK (Daybreak). To make a Hazy IPA truly hazy, hop selection is important, but choosing a yeast that produces a good haze is crucial. Since Yotei Brewing never reuses yeast, we can't always use London Fog, so a yeast that can consistently produce a hazy IPA at a reasonable cost is very important to us. For hops, I chose Peacharine. While we often import hops directly from their country of origin, importing from Freestyle Hops requires a minimum order of 10 bags (50kg), which is quite a large quantity. So, we procure our hops from @hakkosupply, which was started by Gareth from Be Easy Brewing.

The results fully met our expectations for a Hazy IPA. We sourced only 5kg of hops, yielding about 350L, which translates to a usage of 3-4lb/bbl. We simply dry-hopped half during high fermentation and half during the latter half of fermentation under pressure, and it achieved a solubility similar to agitation with a pump. Since there's a risk of oxidation when agitating with a pump, getting such a strong hop presence just by adding hops is, I'd say, characteristic of New Zealand hops, and it exceeded my expectations.

When I hear "peach," the first thing that comes to mind is juicy white peaches from Fukushima Prefecture, but considering that yellow peaches are dominant overseas, I strongly sense the flavor of yellow peaches from Peacharine. As this yeast has low flocculation, the haze is expected to last for a long time. I hope many people will experience the ripe fruitiness and slight wildness that you rarely taste in North American hops.
