We’ve never shied away from using unfamiliar hops, yeasts, or brewing methods—but DYBRK stands out as one of our most experimental beers to date.

For this batch, we paired PINK (ID-158)—a developmental hop that’s not yet widely available—with WHC Lab’s Pineapple Passion yeast, making its debut in our brewery. Naturally, the goal was to explore the potential of biotransformation—where yeast modifies hop compounds into new, vibrant aromas.

We used a moderate 3 lb/bbl of hops, split between the whirlpool and two rounds of dry hopping. Fermentation was conducted at a relatively high temperature of 24°C.

PINK comes from Jackson Farm, the same growers behind Idaho-7. While not as punchy as Idaho-7, it offers a delicate aroma reminiscent of apples and lychee, and it really shines in dry hopping. Its impact in the whirlpool is more subtle, but it reveals layers of complexity as the beer matures.

Right after packaging, the beer pours quite hazy—but we’ve taken no steps to clarify or preserve that haze. Part of the fun is seeing how the beer evolves over time, both visually and aromatically.

There’s no wheat malt or oats in the grain bill, so despite its murky appearance, the mouthfeel is surprisingly clean. A crisp bitterness provides structure, delivering a finish that’s light and refreshing—defying expectations.

While rooted in experimentation, DYBRK remains unmistakably a Yotei Brewing beer.
