After working with WHC Lab’s Pineapple Passion yeast for DYBRK, we were inspired to brew another Hazy IPA. While hop selection is important, achieving that signature hazy appearance relies just as much on choosing the right yeast strain.

At Yotei Brewing, we never repitch yeast. That makes it impractical for us to use London Fog every time, so finding a strain that’s both cost-effective and reliably hazy is crucial for us.

For this batch, we selected Peacharine hops from New Zealand. We often import hops directly from producers, but in the case of Freestyle Hops—where the minimum order is 10 bags (50kg)—we sourced them through Hakko Supply, the hop import project started by Gareth of Be Easy Brewing.

The result is a Hazy IPA that more than meets expectations. We brewed approximately 300L using 5kg of hops, translating to about 3–4 lb/bbl. We dry-hopped twice under pressure—once during active fermentation and once later in the process. Despite not using a pump for recirculation, the hop integration was excellent, with a saturation level that felt almost as if we had. It’s a great reminder of what New Zealand hops can deliver—intensity without the oxidative risks.

When we hear “peach,” juicy white peaches from Fukushima might come to mind. But globally, yellow peaches are the standard, and that’s exactly what Peacharine evokes: ripe yellow peach flavor, with a hint of tropical depth. The yeast we used also has low flocculation, so we expect the haze to hold for a long time.

This beer offers a ripe fruit character and a touch of wildness—something you rarely get from North American hops. We hope many of you will have a chance to enjoy it.
